Spinach, Chickpea and Potato Hash

This cupboard recipe is so delicious and so easy to make you’ll be enjoying it for breakfast, lunch or dinner.

Method

1Heat a large frying pan and reduce the heat and pop in the sliced onions. Cook until soft, add the curry powder, stir well.

2Now add the potatoes and turn up the heat to start colouring them. Break them with the back of the wooden spoon as they are cooking. As they are starting to brown add in the spinach and the chopped tomatoes.

3Season and cook through until piping hot.

4Set to one side while you fry the eggs, fry these to your taste (you may like them crispy!) Enjoy immediately!

Ingredients

1 Can of Potatoes (Drained)

1/2 Can of Chopped Tomatoes

1 Can of Spinach (Drained)

1/2 Can of Chickpeas

2 tbsp Oil

1 tsp Curry Powder

1 Onion (Thinly Sliced)

4 Eggs

Salt and Pepper

Handful of Chopped Parsley
