High Protein Salad Jar

This recipe combines layers of our favourite salad ingredients in an easy and reusable salad jar. Prepare your work colleagues for envy, as they’ll be jealous there not tucking into this creation when they see it in the work fridge tomorrow!

Method

1Make the dressing by combining all the ingredients together into a screw top jar, shake well.

2Pour the dressing into the bottom of each Mason jar, then layer each of the ingredients in the order as on the list.

3Simply shake the jar when ready to eat.

Ingredients

1 x 325g canned sweetcorn

2 x 110g canned tuna in spring water

1 x 400g canned kidney beans

Juice of ½ lemon

½ tsp Herbes de Provence

Pinch salt

Black pepper

½ tsp Dijon mustard

2 tsp honey

3 tbsp extra virgin olive oil

250g cherry tomatoes, halved

½ cucumber, sliced

8 leaves of Romaine lettuce, torn

4 sticks celery, sliced

120g crumbled feta

100g walnut halves

4 tsp chia seeds
