Pineapple Relish

Pineapple can be used in many ways for either sweet or savoury dishes, canned is great for either. I serve this side with grilled or BBQ’d turkey, or grilled fish. I also remove the onions and garlic and serve it with vanilla ice cream!

Method

1Lightly grill the pineapple rings on a hot BBQ.

2Place all the rest of the ingredients together and mix well, then spoon over the grilled pineapple slices.

Ingredients

1 x 435g canned pineapple, well drained

1 cloves garlic, crushed finely

¼ tsp dried red chilli flakes

Juice of 1 fresh lime

4 spring onions, finely chopped

1 red pepper, small cubes

4 tbsp extra virgin olive oil

4 tbsp fresh mint

Salt and pepper
