Mixed Bean Salad

This vibrant, refreshing salad is a speedy vegan treat. Made with a variety of canned beans, this recipe can be ready in under 10 minutes. Lunch will never be the same again.

Method

1Make the dressing by putting all ingredients into a screw top jar, cover and shake.

2Pour the dressing over all the salad ingredients in a bowl. Toss or mix well.

Ingredients

1 x 400g canned mixed bean salad

1 x 400g canned black eyed beans

1 x 400g canned cut French beans

6 cherry tomatoes, halved

3 spring onions, finely chopped

Few mint leaves, finely chopped

15g flat leaf parsley with stems, chopped

15g coriander leaves with stems, chopped

For the dressing:

2 tbsp olive oil

Juice of ½ lemon

1-2 tsp mustard, as desired

Pinch salt

Freshly ground black pepper
