This recipe mixes traditional Mexican flavours with crunchy vegetables and high fibre canned pulses to create burritos the whole family can enjoy after a busy day. Serve with wholemeal wraps and a sprinkle of cheese for even more flavour and calcium to help support growing bones.


1 onion finely diced

2 garlic cloves finely chopped

A handful of frozen mixed peppers

2 x 400g cans of minced beef and onion

1 tbsp of Mexican spice mix

1 can of sweet corn drained

1 x 400g can of kidney beans drained

1 pack of flour tortillas weight please 

100g grated cheddar

Handful of crunchy shredded lettuce

Tbsp of guacamole

Tsp of sour cream


  1. Soften the onions and garlic in a hot pan until they begin to brown.


  1. Add the peppers and the canned minced beef and mix together with the onions and garlic.


  1. Stir in the Mexican spices, adding more chilli if you like it hot! Add the canned sweet corn and kidney beans and simmer until well cooked through


  1. Warm the tortillas up and fill them with the burrito mixture. Top with the cheese, lettuce, guacamole and sour cream. Enjoy!
