Festive Eve’s Pudding

November 12, 2018

If you like to bake, have a sweet tooth, and don't want to spend hours in the kitchen, this one's for you! A classic sponge topping over a speedy short-cut apple pie filling. All you need is some Greek yogurt or canned custard to serve.

This delicious recipe was created by Azmina Govindji for Love Canned Food.

1Heat the oven to 180C/160C Fan/Gas 4. Beat the butter and sugar until the mixture is pale and fluffy. This will take about 3mins using an electric hand whisk (5-10mins by hand).

2Beat in the eggs, a little at a time. With a large spoon carefully fold in the flour. Add enough milk to give the mixture the soft consistency.

3Mix the apple pie filling, raisins and cinnamon and transfer into a shallow oven proof dish, 13cm x25cm. Pour over the sponge mixture and bake for 30-40mins until golden and the sponge is cooked. (Insert a skewer or sharp knife into the middle of the sponge if it comes out clean, without any streaks of sponge mixture, it is cooked).
