Cherry Piña Colada Mocktail

For a unique take on a famous cocktail, this simple yet yummy summery drink is made with canned pineapple chunks and a mixture of different delicious  berries. Enjoy this refreshing mocktail either at a house party or a summer BBQ.

Method

1To make this delicious cocktail for your next summer BBQ, follow these simple recipe steps. Place the canned pineapple chucks (including the juice!), raspberries, cherries, coconut milk and lime juice into a blender. Here, you can either add ice to the mixture or pour the mixture over ice after – up to you. Puree until smooth.

2Thread three cherries onto each cocktail stick to give that extra holiday look. Pour into a glass, add a couple of ice cubes, and decorate with cherries. Voila - a taste of the exotic using four cans and ice!

435g canned pineapple chunks, in juice

300g canned raspberries, drained

410g canned cherries, drained

400ml canned light coconut milk

Juice of 1 lime

Pitted cherries, in light syrup, to decorate
